For years, I struggled silently with severe diabetes, autoimmune disease, stage 3 fatty Liver, kidney issue, and eventually, a diagnosis of celiac. My body was at war with itself, and food — something that should have nourished and comforted me — became a source of fear, frustration, and constant restriction. I was overwhelmed, discouraged, and honestly, tired of bland “health” foods that never truly felt satisfying.
But through that struggle, I found something unexpected: purpose and the passion to help others.
